ヒトに似た味覚感受性をもち，実験にもっとも良く用いられるラットの中枢味覚伝導路に沿って，味覚情報の処理について述べた。

味覚ニューロンの四基本味に対する応答プロフィールは，延髄孤束核や橋結合腕周囲核では大体単峰性であるが，視床や大脳皮質では2峰性のものが増える。これはニューロンペア間の相関関数や混合味刺激所見と対応する。応答量は橋で最大で皮質で最小であるが，受容野は上位に行くほど広く，視床や皮質では両側性のものが見られ，味の特徴抽出が推測される。

Taste processing along the central gustatory pathway in rats was described in this review, because rats show taste sensitivity as human beings and have been used extensively for experiments.

Response features of single taste neurons vary along the gustatory pathway. Response profiles of taste neurons to the four basic taste, when the response magnitudes are plotted against taste stimuli arranged along the abscissa in the order of sucrose,NaC1, HC1 and quinine, are of the single-peaked type in the solitary tract nucleus (NTS) and parabrachial nucleus(PBN), as in the peripheral taste fibers.
