Taste processing along the central gustatory pathway in rats was described in this review, because rats show taste sensitivity as human beings and have been used extensively for experiments.

Response features of single taste neurons vary along the gustatory pathway. Response profiles of taste neurons to the four basic taste, when the response magnitudes are plotted against taste stimuli arranged along the abscissa in the order of sucrose,NaC1, HC1 and quinine, are of the single-peaked type in the solitary tract nucleus (NTS) and parabrachial nucleus(PBN), as in the peripheral taste fibers.
