In the five basic tastes of salt, sour, sweet, bitter and umami, the former two are thought to be elicited by the current of corresponding ions flowing into the taste cell through cation channels located in the apical membrane. On the contrary, many biochemical and physiological studies have revealed that the second messengers such as cAMP and IP3 are involved in the signal transduction of at least sweet and bitter taste.
