Recent progress in the study of taste reception mechanisms are summarized in the present review. Understanding of the mechanisms underlying taste reception was greatly advanced by recent studies using patch-clamp technique and optical measurement of intracellular Ca2+ concentration. From patch-clamp analysis, several types of ionic channels such as voltage-gated Na+ channel, L-type Ca2+ channel, T-type Ca2+ channel, delayed rectifying K+ channel, A channel, inwardly rectifying K+ channel and Ca2+-activated K+ channel have been identified in the isolated vertebrate taste receptor cells.
