Abstract

The microville of the taste cell which extend into the taste pore are in direct contact with any chemical solution applied to the surface of the tongue. The primary event in the taste receptor mechanism after application of chemical stimuli is assumed to be the formation of a weak complex between the stimulus compound and a receptor molecule located on the micro-ville membrane, leading to conformation changes in the membrane structure and subsequently to ionic permeability changes in the membrane of the gustatory cell. As a consequence, a receptor potential is generated in the cell.
